Sylvain Pataille firmly believes in his homeland and the terroir of Marsannay, the far northernmost point of the Côte de Nuits. The foundation of his work is clean viticulture. He manages both his own fields and those of his suppliers organically, overseeing all operations. His great respect for the unique terroirs of Marsannay translates into separate vinifications for each parcel, ensuring the identity of each vineyard, each with its own unique characteristics.
In the cellar, Sylvain works in the traditional way, seeking the minimum possible use of electricity: pressing in large, manual vertical presses for both whites and reds, spontaneous fermentations without added sulfites, and the reds in particular are vinified exclusively from whole bunches. All the domaine's wines age for at least two winters in the cellar before being released for sale.
Sylvain Pataille does not come from a family of winemakers; he has always been driven by a visceral and sunny passion for wine. Pataille wines are the fruit of his enormous genius.
