Domaine Benoit Ente is a French Burgundy winery, containing approximately 6 hectares of vineyards divided into 20 plots located mainly in or around the Puligny Montrachet appellation. In 1990 Benoit and his aunt inherited the vineyards belonging to his grandparents, selling all the grapes to shop owners until 1997, when they decided to produce their own wine.
Benoit managed 3 hectares of vineyards until 2013, when his aunt decided to stop working and entrust her nephew with the management of her part of the vineyards. For 6 years Benoit has based his production on rich and powerful wines, but in 2003, following a very hot year which led to excessive ripening of the grapes, he decided to approach a fresher style by seeking greater acidity in grapes.
As regards winemaking, the company believes in a type of sustainable viticulture, however resorting, when necessary, to the limited use of chemical substances. The grapes are harvested exclusively by hand and all the wines undergo a maturation period of 18 months, of which for the first 12 months, the juice is stored in barrels or vats, and for the last 6 months the wines of the same denomination are assembled in vats, thus allowing us to refine and clarify them without filtration.
