100% Chardonnay grapes for this incredible Beaune Premier Cru Champs Pimont Blanc from Domaine Jacques Prieur. It is in fact an elegant and refined white, characterized by a mineral and saline profile, enriched by fruity and pastry notes. It was born in the large hilly and limestone plot "Les Champs aux pieds du mont", where the grapes are grown according to a rational method and harvested by hand at the right level of ripeness. Subsequently the bunches are pressed whole and the wine ferments and ages (for 19 months) exclusively in oak barrels. The result is a very particular and original white, to be kept for more than 5 years.
